Poland
Poland is the best value country in Europe at the moment and it is not close. Meals, trains and beds cost a fraction of what the same things cost two borders west, and the quality has caught up.
It is also a country where the twentieth century is never far from the surface. Visiting Krakow without going to Auschwitz is possible, and a lot of people choose that. Either decision is reasonable, but make it on purpose.
