I have eaten gluten free since around 2015, and travelled the whole time. Every trip, I save the places that worked: the ones where the kitchen understood celiac rather than nodding politely, where I could eat without spending the next day regretting it.
Those saved places are turning into guides here. One city at a time, with what I ate, whether the staff really understood, and whether I would go back. No aggregated lists, no restaurants I have never been to.
